Mini Apple Muffins

Mini Apple Muffins

October 11, 2016

For me, apple cider donuts have always been part of autumn. Loading the kids into the car to visit an apple orchard, picking apples, and ending the trip with a fresh, warm cider donut was a tradition in our house. Today I rarely seek out an apple orchard to pick fresh apples, and I can get the taste of an apple cider donut by making these scrumptious mini apple muffins. Please don't let the boring name deter you! Moist and sweet on the inside, you might be tempted to pop one into your mouth fresh from the oven. But please wait......the topping is what makes these muffins go to the next level. Dipped in melted butter and then rolled in a sugar/cinnamon mixture, these muffins are truly a fall delight that will evoke all those wonderful memories of trips to the apple orchard and, best of all, biting into an apple cider donut.

1Preheat oven to 350 degrees. Grease and flour a mini muffin pan.

2In a large mixing bowl, place flour, sugar, baking powder, nutmeg, and salt. Add softened butter and gently mix until butter is incorporated.

3Combine wet ingredients together in a small bowl, including grated apple. Add to dry ingredients that have been mixed with the butter. Beat on low speed until just combined.

4Using a small ice cream scoop, fill each mini muffin with batter approximately 3/4 full.

5Bake for 12-15 minutes until center springs back when touched lightly. Let cool on wire rack.

6While muffins cool, melt one stick butter in the microwave. In a separate bowl, mix approximately 1 cup sugar and 2 tsp cinnamon.

7Dip a muffin into the melted butter and then into the sugar/cinnamon mixture. Cover the entire muffin with the sugar/cinnamon. As you work, you may need to add more sugar and cinnamon into the bowl. It tends to get clumpy with butter drippings. Continue until all muffins are covered. Take a bite and savor the deliciousness! One recipe yields 2 dozen mini muffins.

1 1/2 cup flour

1/2 cup sugar

1 3/4 tsp baking powder

1/2 tsp nutmeg

1/2 tsp salt

1/3 cup butter, softened

1/4 cup milk

1 egg, beaten

1 apple, grated (approximately 1 medium apple)

1 stick butter, melted

1 cup sugar

2 tsp cinnamon
