Veggie Stuffed Chicken Breasts

Chicken is so versatile when it comes to dinner recipes, yet sometimes it’s easy to get into a chicken rut!  We end up making the same recipes again and again.

Stuffed chicken breasts are a different and delicious way to prepare your next meal!








What you’ll need:

2 TBSP olive oil

1 cup sliced mushrooms

1 cup cherry tomatoes (sliced in half)

1/2 cup fire roasted red peppers (roughly chopped)

half cup of whipped cream cheese

4 TBSP of jalapeno pepper jelly

3 TBSP of brown sugar

2 TBSP of red wine vinegar

1 1/2 cups of shredded 5 Cheese Italian Blend

salt, pepper and red pepper flakes to taste

3-4 chicken breasts


Sautée all vegetables in olive oil until tender.  Add cheese, jelly, red wine vinegar and brown sugar and stir in until dissolved/melted. Set aside.

Trim off excess fat from chicken breasts and slice them in half, length wise. Stuff with vegetable mixture and secure with wooden tooth picks. Cover with foil and bake for 20-30 minutes or until cooked through.

Top with your favorite pasta sauce, and serve with angel hair pasta and salad or green vegetables!
